Are you headed to a BBQ today, and still haven’t found what you would like to bring? Here are a few suggestions… Pictured clockwise from top left.
Roasted Corn Salad (a Cooking Light recipe) – if you bring this to an outing be sure to have copies of the recipe – it’s a hit! Use fresh corn sliced off the cob.
Roasted Shrimp and Tomato Orzo with Feta – oh la la – I took a recipe that was a hit (that boiled the shrimp) and instead roasted it along with the tomatoes. What happened was a sweet surprise! Nothing better than roasted anything – it adds a wonderful sweetness.
Tex Mex Dip – a great combo of ingredients – that I played with until I got how I like it for us. In addition I used Greek yogurt instead of sour cream – this is a treasure! Serve with tortilla chips.
Ice Cream Cones – For those of you in a hurry – this is a winner! Who doesn’t love an ice cream cone? It’s like being a kid again! Don’t forget the napkins!
As you celebrate America’s independence – a few reminders, just because this can be a deadly time of year. I know you all know this, but if it will help person (or animal!), then it’s worth it!
Pets – keep them cool, and away from fireworks if possible. This is the biggest day of the year for dogs to go missing because of the fear that the fireworks cause. So be responsible. If you have to use fireworks, have a safe place indoors with soothing music for your pets.
If you drink, text or stay on your phone – please call Uber or anyone who will come and get you!
Fireworks… they aren’t great for many people – Fireworks can be a horrific reminder of war, school shootings, etc.. If you use them, please be mindful of people (and pets) – It might be nice to let your neighbors know if you will be using fireworks. They may be able to plan to getaway, or close up with a movie or music to help with the noise.
